Fish Stew

18 Roma tomatoes, diced
1 medium zucchini, diced
1/2 medium yellow squash, diced
1/2 white onion, diced
4 celery stalks, diced
1 lb cod fillet, cut into 1/4" pieces
1 lb shrimp, de-veined, peeled, cut into thirds
3 tablespoons Old Bay seasoning
1. Dice all ingredients. place in a crock pot or slow cooker. Add seasoning. Stir well to mix ingredients.
2. Cook on high heat for 4 - 4.5 hours.
3. Stir again and serve.
Makes 5 - 6 healthy sized portions.
This is very easy to prepare. The vegetables provide more than enough water for the stew, no added liquid is necessary. The ingredients can be diced and mixed the day before and refrigerated. I have had this with scallops and cod also. Feel free to substitute your favorite seafood.
